Not a lot here yet, I haven't tried it.  But I know that many people do.  I've been told that smoked carp is quite delicious.  Additionally, I've heard many rumors that most of the fish fillet sandwiches served at US fast food joints are in "Fillet O' Carp" sandwiches.  I don't have any real data to back that up yet though.

While some of our friends in the UK and Europe may cringe at the thought of killing a Carp, I am a firm believer in utilizing selective harvest of fish.  I do not believe in ever wasting fish.  But, If you want to take home a few small ones to eat, I see no problem with it.
